Ingredients
1 lbs of dried black beans, soaked and drained. I usually soak overnight.
2 peeled mangoes, pitted and diced
4 minced garlic cloves,
1 tsp of curry powder
1 tsp of ground allspice
1 tsp of paprika
1 tsp of ground ginger
1 tsp of Tabasco sauce, and more for serving
4 cups of vegetable broth
Salt and pepper
Preparations
1. Pour the drained beans into a 6-Quartslow cooker.
2. Combine vegetable broth, Tabasco sauce, ginger, paprika, allspice curry powder, garlic and 1/2 cup of the diced mango. Stir well.
3. Cook with the lid on for 8 to 10 hours on LOW or until the beans are soft.
4. Carefully stir in the remaining half cup of mango just before serving.
5. Adjust taste by adding more Tabasco, pepper and salt.
