Ingredients
Salt and pepper to taste
1/4 cup of flaked coconut
1/4 cup of mango chutney
1 large acorn squash, cut in quarters, seeded and stringy pulp removed
Preparations
1. Spray a non-stick cooking spray on the insert of a 6 Quart slow cooker
2. Place the quarters squash into the slow cooker.
3. Stir the coconut and the chutney together and share among the squash quarters centers. Season with pepper and salt.
4. Cook with the lid on for 2 to 3 hours on LOW, until squash quarters are fork tender.
