Bulgur is a delicious wheat grain and the perfect backdrop for vegetables and cheese. It’s ready in just 20 minutes and can be combined with everything from roast chicken to deep-fried tofu for an earthy, satisfying meal.
2 cups cherry tomatoes, halved
1 cup broccoli florets, blanched
½ cup coarsely chopped red bell pepper
2 shallots, minced
½ cup chopped parsley leaves
2 tablespoons red wine vinegar
2 tablespoons extra-virgin olive oil
1 cup bulgur, cooked according to package directions
1 ounce fresh goat cheese, crumbled
1. In a large bowl, combine the tomatoes, broccoli, bell pepper, shallots, and parsley. Add the vinegar and oil, and toss well to combine. Add the cooked bulgur and toss again.
2. Sprinkle the goat cheese over the top and serve in large bowls.
