LONG-GRAIN RICE AND VERMICELLI PILAF

A TRUE LEBANESE MEAL IS NEVER COMPLETE WITHOUT AT LEAST ONE or two side dishes (usually more). I find that my glorious greens, beans, and grains enhance whatever main dish I’m serving, and occasionally even outshine the star! In this chapter, I’ve included a large variety of sides that pair perfectly with my Asha (Main Meals) and Shawraba (Soups and Stews), like traditional Rez b Shayriyeh (Long-Grain Rice and Vermicelli Pilaf), and not one but two types of fries! Stewed Green Beans in oil, or Loubieh b Zeit, and caramelized cabbage Makmoura make wonderful, easy-to-prepare side dishes and complements to Salatas and Mezza. For anyone who is vegetarian (like my sister Selma), gluten-free, vegan, or just a veggie lover, like yours truly, this chapter is created just for you!
