Slightly more mellow than the meat shawarma spice mix, my chicken shawarma spice mix is still very robust and flavorful, with delicate white pepper playing off fragrant cumin, coriander, and cardamom. Ginger and garlic powder add a hint of intensity, which brightens up chicken. This mixture makes for an excellent dry rub, but is especially delicious as a marinade with olive oil, lemon juice, red wine vinegar, garlic paste, and thick labneh yogurt. The addition of labneh in the marinade will ensure very moist and juicy chicken. MAKES ½ CUP
