Yansoun

anise-steeped tea

Yansoun, literally translates to “anise.” This light, licorice-steeped tea is soothing to my soul and spirit—even hearing the word Yansoun soothes me immediately. Yansoun is a very healing tea, often used for upset stomachs or baby’s colic, and frequently enjoyed before bed to ensure a restful night’s sleep. The flavor is fragrant without being overpowering, and the anise adds a slightly spicy sweetness to every sip. I love to sweeten it with orange blossom honey, but feel free to use any raw or clover honey. MAKES 6 SERVINGS

3 teaspoons anise seeds

1 whole cinnamon stick

3 tablespoons orange blossom or clover honey, plus more to taste

In a large teakettle or regular pot, combine 6 cups of cold water, the anise seeds, and cinnamon stick. Bring to a boil over medium-high heat, then reduce the heat to low and simmer for 5 to 7 minutes. Remove from the heat, stir in the honey, and allow to steep for another 2 to 3 minutes.

Pour the tea into cups through a fine-mesh sieve, pouring in a thin stream so the seeds remain at the bottom of the pot. Sweeten with additional honey to taste. Serve immediately.
