John Collins, a headwaiter at Limmer’s Hotel and Coffee House in London, is credited with the invention of both the John Collins and Tom Collins drinks. The John Collins is typically produced using American whiskey while the Tom Collins is usually now made with London Dry Gin, since Old Tom sweetened gin stopped production in the 1960s.
