Side dishes could really make or break a meal back in the baby boomer era. While a meat dish usually took center stage, it was the sides that would bring the entire meal together and take dinnertime from average to memorable. I like making one or two of these on a Sunday (especially if it’s a casserole) and then pairing them up with different dinners throughout the week. That way I can serve multiple dishes per meal without cooking several different dishes every night.
