TOMATO CASSEROLE
2 pounds roma tomatoes, quartered
1/2 pound green beans, blanched
1 to 2 jars artichoke hearts
1 cup shredded mozzarella cheese
1/2 cup chopped fresh basil
1/4 cup Italian dressing
In a large bowl combine the tomatoes, green beans, artichoke hearts, mozzarella cheese, and basil. Add the Italian dressing and toss to coat.
Makes 8 servings.
