MONTANA CHILI

1 onion, diced

1 red bell pepper, diced

1 yellow pepper, diced

1 green pepper, diced

1 tablespoon granulated garlic

3 pounds beef (prime rib, tenderloin, NY), diced

2 tablespoons olive oil

1 tablespoon paprika

3 tablespoons chili powder

1 tablespoon salt

1 tablespoon black pepper

2 cups chili sauce

1 can kidney beans, rinsed and drained

1 can diced tomatoes

In a skillet over medium heat sauté the onion, peppers, and granulated garlic.

In a large pot brown the beef in the olive oil. Add the paprika, chili powder, salt, black pep­per, chili sauce, kidney beans, and tomatoes with juice. Stir in the sautéed onion and peppers and simmer for 1 hour.

Makes two gallons.
