BAKED CHOCOLATE MOUSSE
5 1/2 ounces dark chocolate
2 tablespoons butter
2 tablespoons heavy cream
3 eggs (yolks and whites separated)
1 tablespoon sugar
Preheat the oven to 350°. Melt the chocolate and butter in a bowl in the microwave or in a double boiler. Add the cream and egg yolks to the chocolate and mix using a whisk. In a separate bowl, whip the egg whites to soft peaks, adding the sugar at the end. Carefully fold the whites into the chocolate mixture using a rubber spatula. Scoop the mixture into a buttered soufflé ramekin or a pre-baked tartlet shell. Bake for 5 to 6 minutes. The center will be liquid.
Serve hot with ice cream or fruit salad.
Note: Mixture can be made up to six hours before serving.
