BARBECUE SPARE RIBS
1 8-ounce can crushed pineapple, undrained
Dark brown sugar
2 slabs spareribs, about 4 pounds
Salt and pepper
Paprika
In a saucepan over medium heat, combine the pineapple with juice with enough brown sugar to make a thick sauce. Cook until the sauce is very thick, stirring frequently. Brush the sauce onto the ribs.
Preheat the grill to low. Cut the slab of ribs into single ribs and heavily salt and pepper both sides. Sprinkle a good amount of paprika on both sides. Place on the grill and cover. Turn the ribs every 30 minutes, basting after each turn, being careful not to burn the ribs. Cook for 2 hours, or until the ribs are done.
Makes 6 servings.
