Judith Diehl’s Aggression Cookies

I hope everyone is as lucky as I am to have had a friend like Judith Diehl. We shared so many good times together, and she always served these cookies. I miss her.

1 ½ cups butter, softened

1 ½ cups firmly packed brown sugar

3 cups quick-cooking oats

1 ½ cups all-purpose flour

1 ½ teaspoons baking soda

Preheat the oven to 350 degrees. Lightly grease a large cookie sheet. In a large bowl combine the softened butter, brown sugar, and oats. In a small bowl mix the flour and baking soda together. Add this to the oat mixture and use your hands to form a dough. Shape the dough into small balls. Place on the prepared cookie sheet two 2 inches apart and flatten with a fork. Bake each batch for 8 to 10 minutes. Remove from the cookie sheet and cool on a wire rack.

Makes 4 to 5 dozen cookies.
