Baked Bean Casserole

Thanks to my friend Donna Stock for this delicious recipe.

1 (29-ounce) can pork and beans

1 (15-ounce) can kidney beans, drained

1 (15-ounce) can lima beans, drained

1 (15-ounce) can whole kernel corn, drained

1 pound hamburger meat

½ cup finely chopped onion

½ cup finely chopped green bell pepper

¼ cup firmly packed brown sugar

½ cup ketchup

2 tablespoons apple cider vinegar

1 tablespoon mustard

½ teaspoon salt

1 teaspoon black pepper

8 slices bacon, uncooked

Preheat the oven to 300 degrees. Grease a 13 x 9-inch baking dish. Set aside. In a large mixing bowl combine the pork and beans, kidney beans, lima beans, and corn and set aside. In a large skillet brown the hamburger meat over medium heat, stirring to crumble. Add the onion and bell pepper and continue to stir until soft. Drain the grease. Add the brown sugar, ketchup, vinegar, mustard, salt, and pepper to the skillet and stir well. Pour the hamburger mixture in the bowl with beans and corn and stir to mix. Place in the prepared baking dish. Top with the bacon slices. Bake uncovered for 1 ½ hours.
