Carrot Fruit Salad

You know what they say about carrots being good for your eyes? Well this dish goes one step further— it is one of the most “eye-appealing” dishes I make.

6 cups grated carrots

½ cup golden raisins

½ cup crushed pineapple, drained

½ cup shredded coconut

3 cup mayonnaise

1 teaspoon sugar

5 teaspoon salt

In a serving bowl combine the carrots, raisins, pineapple, coconut, mayonnaise, sugar, and salt. Refrigerate until serving time.

Makes 6 to 8 servings.

NOTE: I like to prepare this at least 4 hours in advance. It can be made the day before serving.
