Black Bean Soup

This is a good hearty soup.

2 (15-ounce) cans black beans, drained and rinsed

1 (15-ounce) can chopped tomatoes

1 (10-ounce) can tomatoes with green chilies

1 (15-ounce) can chicken broth

2 (4-ounce) cans green chilies

1 (15-ounce) can whole kernel corn

½ cup sliced green onions

2 tablespoons chili powder

2 teaspoons cumin

In a Dutch oven or large saucepan, combine the beans, chopped tomatoes, tomatoes with green chilies, chicken broth, green chilies, corn, green onions, chili powder, and cumin. Cook over medium heat until the mixture comes to a boil. Reduce the heat to simmer. Cover and simmer for 2 hours, stirring occasionally.

Makes 8 servings.
