Rolled Apple Cobbler
This is not a traditional cobbler by any means. But it sure is delicious.
½ cup butter
1 ½ cups sugar
2 cups water
1 ½ cups self-rising flour, plus extra for rolling out pastry
½ cup vegetable shortening
cup milk
2 cups peeled and finely chopped apples
1 teaspoon cinnamon
Preheat the oven to 350 degrees. Place the butter in a 13 x 9-inch baking dish and put it in the oven to melt. When the butter is melted, remove from the oven and set aside. In a small saucepan cook the sugar and water over low heat for 3 to 5 minutes, stirring occasionally. Remove from the heat and set the sugar syrup aside.
In a medium bowl combine the flour and shortening, using your fingers to mix until a crumbly mixture forms. Add the milk and stir to make the dough. Place the dough onto a floured board. Knead until smooth. Roll the dough into an 8 x 4 x ¼-inch-thick rectangle.
In a small bowl mix the chopped apples and cinnamon together. Spread over the dough. Roll the dough jelly-roll-style from the long side. Pinch the edges together. Cut into 1-inch slices. Place cut side down in the prepared baking dish. Pour the sugar syrup over the slices. Bake for 50 minutes. Serve warm.
