Melt in Your Mouth Corn Bread
I am a Southern cook and I have a corn bread recipe for almost every occasion. Yes, this one has a lot of butter in it. But it does just melt in your mouth. And for real Southerners, this is great crumbled in milk.
½ cup self-rising flour
½ cup self-rising cornmeal
½ cup buttermilk
2 large eggs, slightly beaten
½ cup butter
Preheat the oven to 400 degrees. In a medium bowl combine the flour and cornmeal. Add the buttermilk and eggs, stirring to mix well. Melt the butter in a 9-inch skillet over medium heat. When melted, pour the butter over the corn bread mixture and stir well. Return the corn bread batter to the skillet and bake for 20 minutes or until golden brown.
To serve: You can remove the corn bread from the skillet when you take it out of the oven or serve from the skillet if you prefer.
Makes 12 servings.
