Hunk-a Hunk-a Barbecued Bologna

In the South, bologna is sometimes referred to as “poor man’s steak.” But this is one of the richest, most flavorful cuts of meat I serve at parties.

3 to 4 pounds unsliced bologna

½ cup butter

Juice of 2 lemons

1 cup chili sauce

2 teaspoons Worcestershire sauce

Party rye bread (optional)

Swiss cheese (optional)

Mustard (optional)

Preheat the oven to 250 degrees. Score the bologna on all sides and place in a 13 x 9-inch baking dish. In a small dish combine the butter, lemon juice, chili sauce, and Worcestershire sauce, stirring to mix well. Cover the bologna with the sauce. Place in the oven and bake for 3 hours, basting often to prevent drying.

To serve: Remove bologna to a serving platter. Cover with the sauce from the baking dish. Allow your guests to cut their own slices of the bologna. Serve with party rye bread, Swiss cheese, and a dish of mustard if desired.

Makes 10 to 12 servings.
