Chili Cheese Pie
This delicious dish resembles a cheesecake when finished. Just scoop with tortilla chips for some delicious tailgate fare.
1 cup crushed tortilla chips
3 tablespoons melted butter
2 (8-ounce) packages cream cheese, softened
2 large eggs
1 (4-ounce) can chopped green chilies
2 jalapeño peppers, minced
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
½ cup sour cream
¼ cup chopped green onions for garnish
½ cup chopped tomatoes for garnish
½ cup chopped black olives for garnish
Tortilla chips for serving
Preheat the oven to 325 degrees. Grease the bottom and sides of a 9-inch springform pan and set aside. In a small bowl mix the crushed tortilla chips and butter. Press the mixture over the bottom of the prepared pan. Bake for 15 minutes. In a large bowl beat the cream cheese and eggs. Stir in the green chilies, jalapeño peppers, and cheddar and Monterey Jack cheeses. Pour over the baked layer and bake for and additional 30 minutes. Remove from the oven and cool for 5 minutes. Loosen the side of the pan and place the cheese pie on a serving plate. Garnish with green onions, tomatoes, and olives. Chill 1 hour before serving.
