My Blueberry Heaven Pie

Kentucky, Duke, MTSU, UVA, and, of course, the Tennessee Titans fans will be in heaven when you take this to a tailgate party.

Crust:

2 cups graham cracker crumbs

½ cup powdered sugar

1 cup chopped pecans

½ cup unsalted butter, melted

Filling:

1 cup sugar

1 (8-ounce) package cream cheese

2 large eggs, slightly beaten

1 tablespoon lemon juice

1 (20-ounce) can blueberry pie filling

Topping:

2 cups heavy whipping cream

¼ cup powdered sugar

To make the crust: Preheat the oven to 350 degrees. In a medium bowl combine the graham cracker crumbs, powdered sugar, and pecans. Add the melted butter and mix well. Spread the mixture in a 13 x 9-inch baking dish and set aside while you prepare the filling.

To make the filling: In a medium bowl, mix the sugar and cream cheese. Add the eggs and lemon juice and mix well. Spread over the crust. Bake for 20 minutes. Let cool and top with the blueberry pie filling.

To prepare the topping: In a small to medium bowl whip the heavy cream and sugar with an electric mixer until stiff peaks form. Spread on top of the pie and serve.
