“Just Chill” Ham and Pasta Salad
While a great party appetizer, this is actually hearty enough to serve as a main course.
Pasta salad:
1 (8-ounce) package elbow macaroni
½ cup chopped red bell pepper
¼ cup finely chopped celery
¼ cup finely chopped onion
1 cup sliced fresh mushrooms
1 cup broccoli, cooked and chopped
2 boiled eggs, chopped
1 cup shredded cheddar cheese
2 cups diced cooked ham
1 cup diced tomatoes
Dressing:
¼ cup red wine vinegar
½ cup sour cream
½ cup mayonnaise
To make the pasta salad: Cook the macaroni according to package directions, drain and rinse with cold water. In a large bowl add the macaroni, red bell pepper, celery, onion, mushrooms, broccoli, eggs, cheese, ham, and tomatoes. Mix gently.
To make the dressing: In a small bowl combine the vinegar, sour cream, and mayonnaise. Mix well and pour over the pasta salad. Toss. Let chill for 2 hours before serving.
Makes 8 to 10 servings.
