Miniature Cherry Cheesecakes
You might think that one of these for each of your guests would be enough, but trust me, it won’t be.
½ cup graham cracker crumbs
2 tablespoons butter, melted
1 (8-ounce) package cream cheese, softened
¼ cup sugar
1 large egg, slightly beaten
½ teaspoon vanilla extract
1 (20-ounce) can cherry pie filling
Preheat the oven to 350 degrees. Line 2 mini-muffin tins with paper liners. In a small bowl mix the graham cracker crumbs and butter together. Spoon 1 teaspoon of the crumbs into each muffin cup and press down. In a medium bowl beat the cream cheese, sugar, egg, and vanilla until well mixed. Spoon the cream cheese mixture onto the crumbs and bake for 10 minutes. Place one teaspoon of cherry pie filling on top of each miniature cheesecake. Chill until serving time.
Makes 24 miniature cheesecakes.
NOTE: People will want more than one, so plan accordingly.
