Tess’s Peanut Butter Fudge

My sister Tess makes this fudge every Christmas and delivers it all over our small town as gifts. She takes it to the bank, to the place she gets her car worked on, and to personal friends. It’s a much-loved tradition in Charlotte, Tennessee. My children look forward to eating this every year.

½ cup milk

2 cups sugar

2 tablespoons corn syrup

1 tablespoon butter

½ cup peanut butter, creamy or crunchy

1 teaspoon vanilla extract

In a medium saucepan combine the milk, sugar, and corn syrup. Bring the mixture to a boil over low heat and let boil for 3 minutes. Remove from the heat and add the butter, peanut butter, and vanilla. Beat with a wooden spoon until the mixture begins to thicken. Pour into a buttered 9-inch-square dish. When cool cut into squares.

Makes 3 dozen squares.
