Cranberry Apple Bake

This is a tradition at our home for Christmas and Thanksgiving. But don’t forget this recipe when you are planning a brunch menu at any time of the year.

Fruit:

3 cups peeled, cored, and chopped apples

2 cups fresh cranberries

2 tablespoons all-purpose flour

1 cup sugar

Topping:

1 cup quick-cooking oats

½ teaspoon cinnamon

2 cup chopped pecans

½ cup firmly packed brown sugar

½ cup all-purpose flour

½ cup butter, melted

Preheat the oven to 350 degrees.

To prepare the fruit: Grease a 13 x 9-inch baking dish. In a medium bowl toss the apples, cranberries, flour, and sugar and place in the prepared dish.

To prepare the topping: In a medium bowl add the oats, cinnamon, pecans, sugar, flour, and melted butter. Mix well and sprinkle over the cranberry-apple mixture. Bake uncovered for 45 minutes.

Makes 8 to 10 servings.
