Tuna Salad with Apples and Craisins
The ladies in my cooking classes rave about this easy and delicious dish. If you’re not a fan of Craisins, you can substitute grapes, but I like the nice tart kick they provide.
2 (6-ounce) cans tuna packed in water, drained and rinsed
cup Craisins
½ cup chopped pecans
¼ cup finely diced sweet pickles
1 cup shredded Monterey Jack or cheddar cheese
1 cup peeled and finely diced apples
½ cup mayonnaise
In a medium bowl combine the tuna, Craisins, pecans, sweet pickles, cheese, and apples. Stir to mix well. Fold in the mayonnaise. Add more mayonnaise if you like your tuna a little moister. Store in the refrigerator.
Makes 6 to 8 sandwiches.
