Bacon, Egg, and Cheese Casserole

My daughter serves this at her home every Christmas morning. The beauty of this recipe is that you do the majority of the work the day ahead.

¼ cup butter, melted

6 slices white bread, cubed

2 ½ cups shredded cheddar cheese, divided

8 large eggs, beaten

1 teaspoon dry mustard

2 cups milk

1 pound bacon, fried and crumbled

Pout the melted butter in a 13 x 9-inch baking dish. Sprinkle the bread cubes evenly over the butter and sprinkle with 1 ½ cups of the cheese. In a medium bowl combine the eggs, mustard, and milk. Pour over the bread and cheese. Place the crumbled bacon on top of the egg mixture. Sprinkle with the remaining 1 cup cheese. Cover and place in the refrigerator overnight. The next morning preheat the oven to 325 degrees. Bake uncovered for 45 to 50 minutes.

Makes 8 to 10 servings.
