Chocolate Mint Brownies
If there’s anything better than curling up with a good book, it’s curling up with a good book and this brownie.
Brownies:
2 (1-ounce) squares semisweet baking chocolate
½ cup butter
2 large eggs, well beaten
1 cup sugar
¼ teaspoon peppermint extract
½ cup all-purpose flour
teaspoon salt
Mint icing:
2 tablespoons butter, softened
1 cup powdered sugar
1 tablespoon heavy whipping cream
¼ teaspoon peppermint extract
3 drops green food coloring
Glaze:
1 (1-ounce) square semisweet baking chocolate
1 tablespoon butter
To make the brownies: Preheat the oven to 325 degrees. Grease a 9-inch-square baking dish. Bring the water in a double boiler to a boil and add the chocolate and butter to the bowl over the water. Stir over low heat until melted. Remove from the heat and let cool for 15 minutes. Add the eggs, sugar, peppermint extract, flour, and salt to the melted chocolate mixture. Mix well and pour into the prepared dish. Bake for 20 to 25 minutes or until firm. Let cool.
To make the mint icing: In a small bowl mix the butter, sugar, heavy cream, peppermint extract, and food coloring until creamy. Spread on top of the cooled brownies. Refrigerate the brownies while making the glaze.
To make the glaze: In a double boiler melt the chocolate and butter together over low heat. Stir to blend. Drizzle the glaze over the mint frosting. Refrigerate to set the chocolate.
Makes 2 dozen brownies.
