Mrs. Eva’s Strawberry Preserves
What makes this simple recipe special is the second step of pouring boiling water over the berries. It really helps preserve the color of the strawberries.
2 quarts firm ripe strawberries
6 cups sugar, divided
Wash and cap the strawberries and place in a large bowl. Pour enough boiling water over the strawberries to cover them by 1 inch. Let stand for 2 minutes. Drain strawberries and place in a large stockpot. Add 4 cups of the sugar and let come to a full boil over medium heat and cook for 2 minutes once the entire mixture is boiling. Add the remaining 2 cups sugar and continue to boil for 5 additional minutes, stirring occasionally. Pour into a shallow pan, making sure the mixture is not over 2 inches deep, and let stand overnight in a cool place.
Boil 4 pint jars and their lids. Pour the strawberry preserves into the hot jars, leaving ½-inch space at the top. Clean the rim of the jar and place the cap on the jar. Screw the lid band onto the jar. Allow the jars to cool for several hours.
Makes 4 pints.
NOTE: Great for gifts, but be sure to keep some for your family and guests.
