Easy Blackberry Cobbler
Serve this warm with vanilla ice cream on top.
5 cups fresh or frozen blackberries
1 cup water
1 cup all-purpose flour
1 cup sugar
1 teaspoon baking powder
½ teaspoon salt
¼ teaspoon cinnamon
1 large egg, slightly beaten
½ cup butter, melted
Preheat the oven to 350 degrees. Lightly spray an 11 x 9-inch baking dish with nonstick cooking spray. Spread the blackberries in the prepared baking dish. Add the water. In a small mixing bowl combine the flour, sugar, baking powder, salt, and cinnamon. Stir in the egg and mix until crumbly. Sprinkle over the berries. Drizzle the butter over the crumb mixture. Bake for 45 to 50 minutes or until golden brown.
Makes 6 to 8 servings.
