Fresh Strawberry Pie

This is a simple Southern staple that every cook should know how to make.

3 tablespoons cornstarch

3 tablespoons strawberry gelatin

1 cup sugar

1 cup water

1 teaspoon red food coloring

1 quart strawberries

1 (9-inch) piecrust, baked and cooled

1 cup heavy whipping cream

In a small saucepan combine the cornstarch, gelatin, sugar, water, and food coloring. Bring to a boil over medium heat, stirring constantly, until the mixture is thick. Remove from the heat. Wash and cap the strawberries, draining well. Add the strawberries to the filling. Pour into the piecrust. Using a handheld electric mixer whip the heavy cream until soft peaks form. Top the strawberry pie with the whipped cream.

Makes 1 pie or 6 to 8 servings.
