Coconut Glazed Pound Cake

I like to make this cake to have on hand when unexpected company stops by for coffee.

Cake:

2 cups cake flour

½ teaspoon salt

1 ½ teaspoons baking powder

1 cup vegetable oil

2 cups sugar

5 large eggs

¼ cup milk

1 teaspoon vanilla extract

1 teaspoon coconut flavoring

1 cup shredded coconut

Glaze:

1 cup sugar

½ cup milk

¼ cup butter

1 teaspoon coconut flavoring

To make the cake: Preheat the oven to 325 degrees. Grease and flour one 10-inch tube cake pan. Set aside. In a medium bowl sift together the flour, salt, and baking powder. In a medium bowl cream the oil and sugar for 1 minute with an electric mixer. Add the eggs one at a time, beating well after each addition. Add the flour mixture a small amount at a time. Add the milk, vanilla, coconut flavoring, and shredded coconut, mixing well. Pour into the prepared tube pan and bake for 1 hour or until a toothpick inserted in the center comes out clean. Let the cake sit in the pan for 10 minutes before transferring to a serving plate.

To prepare the glaze: In a small saucepan combine the sugar, milk, butter, and flavoring. Place over medium heat and boil for 3 minutes, stirring constantly. Pour directly on the cake and let drizzle over the sides.
