Brown Sugar Brownies
One of my favorite places on earth—the Greenbrier in West Virginia—serves a version of this brownie at tea every afternoon. Your volunteers will thank you if you make this for an afternoon snack.
1 ½ cups butter
1 ½ pounds dark brown sugar
5 large eggs
4 cups all-purpose flour
3 ½ teaspoons baking powder
teaspoon salt
1 (10-ounce) package butterscotch chips
1 ½ cups chopped pecans
Preheat the oven to 350 degrees. Grease and flour a 15 x 10 x 2-inch baking pan and set aside. In a 2-quart saucepan melt the butter and brown sugar over low heat. Remove from the heat and add eggs one at a time, beating until well incorporated. In a large bowl sift together the flour, baking powder, and salt. Add to the egg mixture. Add the butterscotch chips and pecans and pour the mixture into the prepared baking pan. Bake for 25 to 30 minutes or until golden brown and firm to the touch.
Makes 2 dozen brownies.
