Watermelon Salsa

This is a great side dish served alongside barbecue and corn bread.

8 cups diced watermelon

2 cups diced cantaloupe

2 cups diced honeydew

1 medium cucumber, peeled, seeded, and diced

3 cup finely chopped red onion

4 jalapeƱos, seeded and finely chopped

3 cup fresh lime juice

3 cup firmly packed brown sugar

In a large bowl mix together the watermelon, cantaloupe, honeydew, cucumber, onion, and jalapeƱos. In a small bowl combine the lime juice and brown sugar, stirring to dissolve the brown sugar. Pour over the melon mixture and lightly stir.

Makes 12 servings.

NOTE: This salsa is also delicious with chips, as any good salsa should be.
