“Putting on the Ritz” Corn Casserole
If you look up “Southern church lady casseroles” in the dictionary, this is the recipe you will find. It’s been around for years, and for good reason. People love it.
2 (14-ounce) cans whole kernel corn, drained
1 (14-ounce) can French-style green beans, drained
1 (10.75-ounce) can cream of mushroom soup
1 cup sour cream
¼ cup chopped onion
¼ cup chopped celery
1 sleeve (36 crackers) Ritz crackers, crushed
½ cup melted butter
Preheat the oven to 350 degrees. Grease a 13 x 9-inch baking dish and set aside. In a large bowl combine the corn, green beans, soup, sour cream, onion, and celery. Mix well. Pour the vegetable mixture into the prepared baking dish. In a medium bowl mix the crushed crackers and melted butter. Sprinkle over the top of the casserole and bake for 30 minutes.
Makes 10 servings.
