Harmony Hominy Casserole
Truth be told, yellow and white hominy don’t taste all that different. But using both colors adds visually to this traditional Southern casserole.
1 tablespoon vegetable oil
1 cup finely chopped onion
1 teaspoon minced garlic
1 (15-ounce) can white hominy, drained
1 (15-ounce) can yellow hominy, drained
1 cup shredded cheddar cheese
1 (4-ounce) can chopped green chilies
cup sour cream
½ teaspoon cumin
½ teaspoon salt
Preheat the oven to 350 degrees. Grease or spray a 2-quart baking dish and set aside. In a large skillet heat the oil over medium heat. Sauté the onion and garlic until translucent. Add both cans of hominy, the cheddar cheese, green chilies, sour cream, cumin, and salt. Mix well and pour into the prepared baking dish. Bake for 20 minutes or until bubbly.
Makes 8 servings.
