Broccoli Salad with Sunflower Seeds
This salad is great year round, but with fresh broccoli available during the winter months when some other vegetables aren’t, I tend to make it more when it’s cold outside.
Dressing:
1 cup mayonnaise
½ cup sugar
2 tablespoons apple cider vinegar
Broccoli salad:
6 cups broccoli florets, washed and trimmed
1 cup golden raisins
¼ cup finely chopped red onion
1 cup shredded cheddar cheese
6 slices crisp-fried bacon, crumbled
½ cup sunflower seeds
To prepare the dressing: In a small bowl combine the mayonnaise, sugar, and vinegar. Mix well. Set aside while you prepare the salad.
To prepare the salad: Cut the broccoli into bite-size pieces and place in a large bowl. Add the raisins, onion, and cheese to the broccoli. Pour the dressing over the mixture. Toss gently to mix. Cover and chill until ready to serve.
To serve: Sprinkle the broccoli salad with the crumbled bacon and sunflower seeds.
