Mother’s Banana Blueberry Pie
My mother made this very simple pie for my family on many occasions. I think of her every time I make this.
1 (8-ounce) package cream cheese, softened
1 cup sugar
1 (8-ounce) package frozen whipped topping, thawed
4 medium-size bananas
2 (9-inch) baked pie shells
1 (20-ounce) can blueberry pie filling
In a large bowl combine the softened cream cheese and sugar. Fold the thawed whipped topping into the cream cheese mixture. Slice the bananas and place them in the bottoms of the 2 piecrusts, being careful not to overlap the slices. Pour the cream cheese mixture over the bananas. Chill for 3 hours and top with the blueberry pie filling.
Makes 2 pies or 12 to 16 servings.
