Double Treat Chocolate Pecan Bars
Forrest Gump thought things went together like peas and carrots. For me, it’s chocolate and pecans.
3 cups all-purpose flour
2 cups sugar, divided
1 cup butter, softened
½ teaspoon salt
1 ½ cups corn syrup, dark or light
1 cup semisweet chocolate chips
4 eggs, slightly beaten
1 teaspoon vanilla extract
2 cups chopped pecans
Preheat the oven to 350 degrees. Grease a 15 x 10-inch baking pan. In a large bowl add the flour, cup of the sugar, butter, and salt. Mix on medium speed until it becomes crumbly. Press dough firmly into the prepared pan and bake for 20 minutes.
While the crust is baking, prepare the filling. In a medium saucepan over low heat cook the corn syrup and chocolate chips, stirring until the chocolate melts. Remove from the heat and add the remaining 1 ¼ cups sugar, eggs, vanilla, and pecans. Stir until well blended. Pour the filling over the hot crust. Return to the oven and bake for 30 more minutes. Cool for 1 hour before cutting into bars.
Makes 4 dozen bars.
