Cabbage Slaw with Red and Green Apples
If there is a prettier slaw than this, I haven’t seen it. It’s delicious too.
1 medium head of cabbage, shredded (about 8 cups)
1 large red apple, unpeeled, cored and diced
1 large green apple, unpeeled, cored and diced
1 cup toasted slivered almonds
1 cup dried cranberries
½ cup mayonnaise
½ cup sour cream
½ teaspoon salt
½ teaspoon black pepper
In a large bowl mix the cabbage, red and green apples, almonds, and cranberries. In a small bowl combine the mayonnaise, sour cream, salt, and pepper. Combine the mayonnaise mixture with the cabbage mixture. Refrigerate for 2 hours before serving.
Makes 10 servings.
