Hamburger Stroganoff

Talk about quick and delicious. You can have this ready to go in less than half an hour if you are late hearing the news about someone’s passing.

¼ cup butter

½ cup minced onion

1 teaspoon minced garlic

1 pound ground beef (preferably ground chuck)

2 tablespoons all-purpose flour

2 teaspoons salt

½ teaspoon black pepper

1 (8-ounce) can sliced mushrooms, drained

1 (10 ¾–ounce) can condensed cream of chicken soup

1 cup sour cream

In a large skillet melt the butter. Sauté the onion and garlic until they are translucent. Add the ground beef to the onion and garlic mixture, stirring as the beef browns. Add the flour, salt, pepper, and mushrooms. Cook for 5 minutes, continuing to stir. Add the soup and simmer uncovered for 10 minutes. Stir in the sour cream. Heat thoroughly. Serve over rice or noodles.
