Hot Chicken Salad with Potato Chip Topping

While you don’t usually think of chicken salad as a main dish, this one definitely is. Serve it alongside a salad and a vegetable and you have a delicious dinner.

4 cups diced, cooked chicken

½ cup finely chopped celery

2 teaspoons minced onion

1 tablespoon lemon juice

1 teaspoon salt

2 cup slivered almonds

1 cup mayonnaise

1 (10.75-ounce) can cream of chicken soup

1 cup shredded cheddar cheese

2 cups crushed potato chips (plain or ruffled)

Preheat the oven to 350 degrees. Grease a 13 x 9-inch baking dish. In a large bowl combine the chicken, celery, onion, lemon juice, salt, almonds, mayonnaise, soup, and cheddar cheese. Mix well and place in the prepared dish. Top with the crushed potato chips. Bake for 25 minutes or until hot and bubbly.

Makes 8 servings.

NOTE: Cover loosely with foil if the potato chips begin to brown.
