Chocolate Cobbler

I wish I was as rich as this dessert.

½ cup butter

1 ½ cups self-rising flour

2 2 cups sugar, divided

1 2 tablespoons plus 3 cup cocoa, divided

2 cup milk

1 teaspoon vanilla extract

2 ¼ cups boiling water

Vanilla ice cream

Preheat the oven to 350 degrees. Place the butter in a 13 x 9-inch baking dish and put it in the oven for 3 to 4 minutes to melt.

Meanwhile, in a medium bowl combine the flour, 1 ¼ cups of the sugar, 1 2 tablespoons of the cocoa, the milk, and the vanilla. Stir until well blended. Drop the batter by spoonfuls onto the melted butter. In a separate bowl, combine the remaining 1 ½ cups sugar and the remaining 3 cup cocoa. Sprinkle the cocoa mixture over the batter. Pour the boiling water over the batter. Do not stir. Bake for 40 to 45 minutes. Let stand 15 minutes before serving.

Serve with vanilla ice cream.

Makes 10 to 12 servings.
