Sausage and Egg Casserole
Quick and easy! You can prepare this a day ahead so that you can put it in the oven as you start your day. This casserole and some fresh fruit make a perfect Southern breakfast.
8 large eggs, boiled, peeled, and sliced
½ teaspoon salt
½ teaspoon black pepper
1 pound hot or mild pork sausage, cooked and drained
1 ½ cups sour cream
cup dry bread crumbs
1 ½ cups grated cheddar cheese
Preheat the oven to 400 degrees. Grease a 13 x 9-inch baking dish. Place the eggs in the baking dish and sprinkle with the salt and pepper. Add the sausage on top of the eggs. Spread the sour cream over the sausage. In a small mixing bowl mix the bread crumbs and cheese. Sprinkle the cheese mixture over the sour cream. Place in the oven for about 15 minutes to heat thoroughly, until lightly browned.
Makes 8 to 10 servings.
