Cheese Biscuits

This is a great biscuit to serve with country ham.

2 cups all-purpose flour

1 teaspoon salt

4 teaspoons baking powder

3 cup vegetable shortening

1 cup grated sharp cheddar cheese

¼ cup Parmesan cheese

¼ teaspoon crushed red pepper

1 cup milk

Preheat the oven to 400 degrees. Grease a 13 x 9-inch baking pan. In a large bowl sift the flour, salt, and baking powder. Cut in the shortening until the mixture resembles small peas. Mix in the cheddar cheese, Parmesan cheese, and red pepper. Add the milk, stirring well to make a soft dough. Knead slightly. Roll the dough to ½-inch thickness. Cut into biscuit shapes. Bake for 10 to 12 minutes.

Makes 16 to 18 biscuits.
