Ham and Cheese Quiche
One reason I like taking this to someone is that they can eat it at any time of the day. And it is so easy to reheat.
1 tablespoon butter
2 tablespoons minced onion
½ cup diced ham
1 (9-inch) deep dish unbaked piecrust
1 cup grated Swiss cheese
3 large eggs
1 ½ cups milk
½ teaspoon salt
½ teaspoon black pepper
Preheat the oven to 350 degrees. Melt the butter in a small saucepan. Add the onion and cook for 3 minutes or until soft. Add the ham and continue to cook for 1 minute. Sprinkle the onion and ham evenly over the piecrust. Sprinkle the cheese over the onion and ham. In a small bowl whisk the eggs and milk together until well combined. Add the salt and pepper. Pour the egg mixture into the piecrust. Bake for 30 minutes or until the middle is firm to the touch.
Makes 6 to 8 servings.
