This hearty and flavorful oatmeal is anything but mushy and bland! I love incorporating citrus zest in my morning bowl; it adds a burst of flavor without any calories. This recipe would also taste great with lemon zest instead of orange zest, and you can swap your favorite unsweetened dried fruit for the cranberries. Versatile and delicious!
½ cup steel-cut oats
Grated zest of ½ orange
Juice of 1 orange
2 tablespoons dried cranberries
1½ cups water
2 teaspoons chopped pecans
2 teaspoons pure maple syrup (optional)
1. In the Instant Pot, combine the oats, orange zest, orange juice, cranberries, and water. Cover and cook on high pressure for 10 minutes. Let the pressure release naturally for 10 minutes, then quick-release the remaining pressure.
2. If the oats are still watery, let sit uncovered for 5 minutes. The oatmeal will absorb the water.
3. Top with the pecans and maple syrup (if using).
