Here’s a great way to use the Shredded Chicken for a quick lunch. These wraps travel well . . . and hold the phone, they call for real bacon! I know, right? Sounds too good to be true. You can use turkey bacon if you prefer, but it’s just one slice and adds such a perfect crunch and flavor to this dish. Plus, it’s a treat to be able to eat bacon and lose weight! It’s all about moderation, and making a little of a yummy ingredient go a long way.
2 slices bacon
⅓ cup 0% Greek yogurt
½ teaspoon garlic salt
¼ teaspoon Dijon mustard
2 (10-inch) burrito-size whole wheat tortillas
½ cup Shredded Chicken
½ tomato, sliced
⅓ cup chopped romaine lettuce
1. Line a plate with paper towels. In a skillet, cook the bacon over medium-low heat until it’s at your desired crunchiness level (very technical!). Transfer to the prepared plate to drain.
2. In a small bowl, mix together the Greek yogurt, garlic salt, and mustard.
3. Smear each tortilla with the Greek yogurt mixture and top with shredded chicken, tomato slices, romaine, and 1 bacon slice. Wrap them up like a burrito and enjoy now, or transfer them to parchment paper and take them on the road with you.
