DR. ANNA’S LEMON GARLIC VINAIGRETTE

 

INGREDIENTS

  • 1 teaspoon sea salt

  • 3 cloves garlic

  • 2 tablespoons lemon juice

  • ⅔ cup extra-virgin olive oil

DIRECTIONS

The first option is the method I use: With a mortar and pestle, mash the salt and garlic until the garlic is emulsified. Transfer to a bowl, then add the lemon juice and olive oil and stir well. Taste to see if more salt, lemon juice, or EVOO is needed, and adjust accordingly. I’ve been making this since I was a young girl and it is so yummy and good for you. It makes everything taste better. You can put it on salads, sandwiches, chicken, and fish. Make extra and refrigerate.

The second option is to place all ingredients except the oil in a blender or small food processor and puree until smooth. Pour the mixture into a bowl, then add the olive oil and whisk until emulsified.
