Onion Soup with Cheese

Makes 10 servings

Cooking Time: 4 hours

Ideal slow cooker size: 6-qt.

4 large sweet white onions, sliced very thin

1 stick (½ cup) butter

8-oz. loaf French bread, sliced very thin

2 48-oz. cans beef, chicken, or vegetable, broth

1 lb. Swiss cheese, shredded

  1. Saute onion rings in butter in large non-stick skillet or saucepan until soft and golden, about 15 minutes.
  2. Put one-third of the onions in the bottom of the slow cooker. Layer one-third of the bread slices over top. Repeat layering 2 more times.
  3. Pour broth over all.
  4. Cover and cook on High 4 hours.
  5. Stir in cheese 10 minutes before serving.

Variation:

Add 1½ tsp. Worcestershire sauce and 3 bay leaves to Step 2, as the final and top layer.
